Pizza Dessert Tart with the Works

Recipe makes one 12-inch (30.5-cm) pizza

STEP A

Make one recipe of Pâte Brisée with Cream Cheese

STEP B: MIXED BERRY PIZZA SAUCE

MEASUREMENTS INGREDIENTS
U.S. METRIC  
4 1/4 ounces 1 cup 120 g frozen raspberries, thawed and drained
3 ounces 1/2 cup 85 g fresh strawberries, sliced or frozen strawberries, thawed and drained (it is not necessary to slice them, if they were frozen)
2 1/2 ounces 1/4 cup 70 g strawberry or raspberry jam or preserves
  1 teaspoon 5 mL fresh orange juice
  1 teaspoon 5 mL balsamic vinegar

In a food processor, purée all the ingredients and pour the mixture into a bowl. Refrigerate the sauce until needed.

STEP C: TOPPINGS

MEASUREMENTS INGREDIENTS

  1 tablespoon 15 mL milk
  2 teaspoons 10 g course sugar
6 ounces 1 cup 170 g diced fresh or drained canned pineapple
1 ounce 1/4 cup 30 g dried cranberries or cherries
2 ounces 1/2 cup 60 g high-quality white chocolate warmed in a microwave for 20 to 30 seconds on low power and shredded using a grater
2 ounces 1/3 cup 35 g mini semisweet chocolate chips or coarsely chopped semisweet chocolate
1 1/4 ounces 1/3 cup 35 g coarsely chopped walnuts, toasted in a 400°F (205°C) oven for 5 to 10 minutes
1/2 ounce 1/3 cup 15 g shredded coconut, toasted
  1 tablespoon 3 g confectioners' sugar put through a sieve for dusting over the top of pizza

STEP D: ASSEMBLY

  1. Set the oven rack on the lowest position and preheat the oven to 400°F (205°C). Spray a 12-inch (30-cm) pizza pan with nonstick cooking spray.
  2. Roll out the pâte brisée dough onto a lightly floured surface into a 12-inch (30-cm) circle, using the pizza pan as a guide, about 1/4 inch (6 mm) thick. Fit the dough into the pizza pan (Figure 1). Roll the edges over like a cuff on a pant leg, if desired to create a higher edge. With a pastry brush, brush the edges with milk and sprinkle them with course sugar (Figure 2).
  3. Spread 4 ounces (1/2 cup; 119 mL) of the mixed berry pizza sauce evenly over the crust. Reserve the remaining sauce for another use.
  4. Scatter the crust with pineapple and the dried cranberries or cherries (Figure 3). Bake for about 40 minutes or until the crust is golden brown.
  5. Remove the pizza tart from the oven and immediately sprinkle the shredded white chocolate "cheese," mini chocolate chips, walnuts, and coconut evenly over the top (Figure 4). Allow the pizza to cool. Dust the top with confectioners' sugar and serve the pizza at room temperature cut into slices.
